Os Marshmallows nasceram no Egipto antigo, é verdade! Na altura a receita incluia mel e a raíz de uma planta chamada Althea officinalis ou planta Marsh-mallow (assim designada na América do Norte). A raíz desta planta tem propriedades gelificantes e espessantes, sendo muito usada em confecção e na medicina.
A receita foi retomada pelos Americanos, sendo inicialmente usada a raíz de Marsh-mallow, xarope de milho, açúcar e albumina, tudo batido até se obter uma consistência espojosa. Nas receitas actuais, a raíz foi substituída por gelatina e esta é uma das muitas receitas dos Marshmallows dos nossos dias...
30g de maizena
40g de açúcar em pó
4 folhas de gelatina
80ml de água
130g de açúcar granulado
120ml de xarope de milho
sal fino qb
1colher de chá de baunilha líquida
1. Peneirar o açúcar em pó juntamente com a maizena
2. Barrar uma forma e cobrir com o açúcar em pó+maizena (guardar o excesso)
3. Hidratar a gelatina na água e juntar a baunilha ou outro sabor e o sal.
4. Levar ao lume o açúcar e o xarope de milho, deixando dissolver.
5. Numa taça juntar a mistura da gelatina hidratada, com a mistura quente da geleia de milho e bater com a ajuda da batedeira. Bater bem a mistura até ficar com aspecto de claras em castelo (cerca de 15 min).
6. Colocar a mistura no tabuleiro e deixar repousar 2h.
7. Com uma faca soltar os marshmallows, colocar o excedente de açucar em pó+maizena e voltar ao contrário. Cortar com a forma pretendida (o tradicional é aos cubos). Deixar secar durante a noite para a superfície ficar seca. Guardar ao abrigo do ar (duram cerca de 1 mês)
(Pode-se fazer as variantes que se pretender - especiarias, purés de fruta... - juntando os "sabores" durante o passo 3)
The Marshmallow recipe was born in ancient Egypt, can you believe that? Back then the recipe called for a root of a plant called Althea officinalis or Marshmallow plant and honey. The root of this plant had jellifying and texturyzing properties and was often used in candy making and medicine.
The recipe was “reborn” in the USA and the ingredients used were the Marshmallow root, corn syrup, sugar and albumin, everything whisked together until the consistency became spongy. Nowadays the root that gave name to the Marshmallows has been substitute by gelatine. Here I leave you with one of the million recipes…
1/4 cup corn starch
1/3 cup confectioner’s sugar
1 gelatine envelope
1/2 cup water
2/3 cup granulated sugar
1/2 cup light corn syrup
pinch of salt
1 tsp vanilla extract
1. Sieve the confectioner’s sugar and the corn starch together
2. Cover a trey with the sugar+corn starch mixture (keep the excess for later)
3. Hydrate the gelatine in cold water, add the vanilla or other flavour and the salt.
4. Take the sugar and the corn syrup to the heat, so the sugar dissosves, let it boille.
5. In a bowl, and to the gelatine mixture, the corn syrup mixture and start whisking. Wisk for about 15 minutes.
6. Put the mixture in the tray and let it sit for 2 h.
7. With a wet knife, cut the marshmallows edges and turn it over. Cover the surface again with the sugar+corn starch mixture. Cut in to cubes.
8. Let the Marshmallows sit over night to dry the surface and after store them airtight.
