"Puré de batata só à mão ou no passvit", já dizia a minha avó!
As batatas são constituídas por: 80% água, 15% amido e 5% minerais importantes para o bom funcionamento do nosso organismo. O amido existe na forma de grânulos, organizados no interior das células da batata.
Existem de uma forma geral dois tipos de batatas: as cerosas (com maior humidade e menor concentração de amido, logo mais firmes e melhores para cozer) e as farinhentas (com maior quantidade de amido, menos densas, aconselhadas para puré ou para fritar).
O amido quando sujeito a calor e em contacto com água, sofre alterações gelatinizando-se. Assim, para se fazer puré de batata cremoso, NUNCA se deve usar a varinha, pois a acção desta, vai cortar os grânulos do amido, disponibilizando as suas moléculas constituintes (amilose e amilopectina), que ao ligarem-se à água vão formar uma “papa” elástica e pagajosa. As batatas devem ser sim, esmagadas suavemente com a ajuda de um garfo ou esmagador próprio, para se obter um puré cremoso.

The composition of potatoes is: 80% water, 15% starch and some important minerals, for the good function of our body system. The starch is organized in a kind of grain structure in the interior of the potato cells.
There are two kinds of potatoes: the waxy ones (with highest percentage of humidity, less starch and firmer. This kind are good to cook) and the starchy ones (higher percentage of starch, less dense and better to make pure or to fry).
When starch is submitted to heat and in contact with water it changes form, turning in to a gel. Therefore, to make creamy mashed potato one can NEVER use a mixer, because its strong action destroys the starch grains, making them disposable to connect with the water. We will end with an elastic and sticky mass! Otherwise, the potatoes have to be mashed gently with a fork or with a special mashing engine, to obtain a creamy pure.
