Hello --this is really interesting and amazing. I love your site. I have seen some similar techniques in Adria's El Bulli 2003 and 2004. Do you have the recipes and techniches for the olive oil textures, especially the Olive Oil Noodles. I would to see them.

I have been trying to do both an Olive Oil "noodle" and Feta Cheese "noodle" ( I have done a couple permutations and call them "Feta Fettucine" )
